What2Eat: Cinco de Mayo-Chicken Fiesta Soup
In honor of Cinco de Mayo, which is tomorrow, its time for the first what2eat...my chicken fiesta soup! I'm not a great cook or anything but I have some recipes up my sleeve...this one is budget friendly, time friendly and figure friendly, yay. Plus, my outfit kind of reminded me of laying on a beach in Mexico drinkin on some margs! What you will need: one can of chicken broth ( try to get reduced sodium), one can of tomatoes with green peppers ( I personally like rotel), one can of black beans, one can of corn, one or two small cans of shredded chicken (or any chicken leftovers you have in the fridge), one packet of taco seasoning (again, try to get reduced sodium) and freshly chopped cilantro...don't forget this because it totally makes the dish. Add everything but the broth and cilantro to a saucepan, stir, then add broth. Bring to a boil then let simmer for about 10 minutes, serve in a bowl and sprinkle on the cilantro and presto....chicken fiesta soup! How easy is that? Oh yea and some Corona Lights will probably help your taste buds enjoy the party :)
